Bacon wrapped Asparagus

So I have been trying to add more variety to what vegetables we eat. I like asparagus but my hubby wasn't a fan of it. I saw this idea on pinterest a gave it a shot. It was really good. I know its not as healthy as plain vegetables but its really good.
What you need:
  • asparagus
  • vegetable oil
  • salt
  • pepper
  • bacon
What you do:
  1. Trim your asparagus (tips on how to do this below)
  2. Cut bacon in half.
  3. Take a couple pieces of asparagus 2-3 depending on thickness and wrap with 1/2 a bacon slice. Leave both ends sticking out.
  4. Place on baking sheet.
  5. Drizzle a little vegetable oil over the top.
  6. Sprinkle with salt and pepper.
  7. Bake at 400 for about 10 minutes.

Such a yummy meal!!
Tips:
How to trim asparagus. Cut the bottoms off or they will be tough and stringy. If its hard to cut then you need to cut more off!!

Breaded Pork Chops

So this is the first recipe I have posted that is one I came up with. I absolutely love it so I have had a hard time posting it but it is too good not to share! Its pretty easy too just a little time consuming. Make sure you make plenty because there is never left overs!! This is probably my all time favorite recipe! My husband requests it all the time. I hope you enjoy it as much as we do!

What you need:
  • 1 roll whole wheat ritz cracker crushed (easiest in food processor or in plastic bag with rolling pin)
  • 2 T Parsley
  • 1 T Basil
  • 3/4 cup Mozzarella cheese
  • 1 egg
  •  1/2 cup milk
  • 4 boneless pork loin chops (I like mine about 1 inch thick)
What you do:
  1. Mix eggs and milk
  2. MIx cracker crumbs,parsley, basil and mozzarella
  3. Dip pork chops in milk and egg mixture
  4. Then put in breading mixture. Press breading into pork chop so you get alot on. (see picture below)
  5. Sear in hot pan on stove until cheese melts and turns golden brown (this prevents breading from falling off) (see picture #2)
  6. Bake at 350 until fully cooked about 20 minutes

This is great for guests because it tastes like it took alot more effort then it actually did!

Guacamole, Bacon, Grilled Cheese

Found this on pinterest! I didn't think it sounded that good but it was amazing!!! Perfect for a yummy lunch.

What you need:
  • 2-3 avacados
  • 1 roma tomato
  • 1/4 white onion
  • lemon juice
  • lime juice
  • garlic salt
  • cheddar cheese
  • bacon
  • bread
What you do:
  1. I used a food processor and chopped up avacadoes, tomato and onion.
  2. Then add lemon juice, lime juice and garlic salt to taste.
  3. Partially cook bacon. Not so its crunchy just so its not raw.
  4. Put 1 piece of cheese on each slice of bread.
  5. Spread some guacamole over the cheese.
  6. Put 2 pieces of bacon on one piece.
  7. Put bread slices together and cook like grilled cheese
I absolutely loved this. I am not a big guacamole fan but I think that is mostly because I don't like cilantro. But this combination was way good.

Deviled Chicken Thighs!!! MUST TRY

This recipe is the first one I have done from a follower! Thanks to Anneliese!
This recipe is amazing!!!! Like had to stop myself from eating until I was sick. If you only try one recipe out of all the ones I have posted so far Please try this one! It does have a bite to it but the flavor I think is really good! Not too hard to make either. I tried to keep the basic flavors of the original recipe but tried to enhance them.
What you need:
  • 4 T apple cider vinegar
  • 2 T garlic hot pepper sauce
  • 4 chicken thighs whole
  • Dijon Mustand
  • cooking spray
  Breading mixture
  • 1/2 cup flour
  • 1 T parsley
  • 1/2 T thyme
  • 1/4 T garlic salt
  • 1/4 t pepper
What you do:
  1. mix apple cider vinegar and garlic hot pepper sauce
  2. put thighs and mixture in ziplock bag.
  3. marinate 1 hour in fridge. Shake occasionally (if you want it spicier marinate it longer)
  4. Drain excess marinade and pat chicken dry. (don't whip off pepper flakes)
  5. Brush chicken with Dijon mustard on both sides.
  6. Toss chicken in breading mixture (press breading mixture into the chicken on top then flip and repeat)
  7. gently shake off extra breading
  8. Spray glass baking dish then put chicken in skin side up.
  9. Bake at 375 until cooked through. (about 45 minutes)
  10. Half way through baste with the juices in the pan
  11. Before serving poor more juice over the top.

    Tips
    • Flip with tongs instead of spatula! Keeps more of the breading on.
    • If you want less breading just bread the skin side. Still has plenty of flavor. And makes it easier to brown in the pan.

    Like I said this recipe was so good! Definitely will go into my usual rotation!
