What you need:
- 1 lb chicken
- 1 small bag frozen broccoli cuts
- 8 oz fettuccine
- 2 T extra virgin olive oil (evoo)
- 2 t chopped garlic
- 2 T flour
- 1 cup chicken broth
- 6 oz greek yogurt
- 1/4 cup milk
- 1/4 t white pepper
- 1 pinch nutmeg
- 3/4 cup shredded Parmesan cheese
- garlic powder
- season salt
What you do:
- Chunk chicken and season with garlic powder and season salt. cook.
- Heat broccoli
- Boil a pot of water.
- Break fettuccine in half and drop in water.
- Cook 6 minutes. Should still have a little bit of a crunch.
- In a sauce pan heat EVOO.
- Add chopped garlic and heat through. 1-2 minutes.
- Whisk in flour until smooth.
- Gradually whisk in chicken broth, greek yogurt, milk, pepper, and nutmeg.
- Bring to a low boil, stirring often.
- Bring down to a simmer. Let thicken. About 3 minutes.
- Add in pasta.
- Cook for 3-4 minutes.
- Mix in parmesan, chicken, and broccoli.
- Toss and serve.
