What you need:
- 1 cup frozen corn (can substitute canned corn)
 - 2 T lemon juice.
 - 1/4 cup butter melted
 - 1 T honey
 - 1/2 t salt
 - 1/4 t pepper
 - 2 cups uncooked quinoa
 - 4 scallions
 
- cook frozen corn as directed. (if using canned leave cold)
 - Whisk together lemon juice, butter, honey, salt, and pepper in small bowl.
 - Rinse quinoa with cold water until water is clear.
 - Cook quinoa as directed on package.
 - Mix quinoa, corn and scallions.
 - Drizzle with dressing and toss until coated.
 - Serve warm
