What you need:
- olive oil
- beef roast (2 1/2-3 lbs.)
- salt and pepper
- 2 1 oz pkgs dry onion soup mix
- 2 cups water
- 2 cans beef broth
- provolone cheese
- hoagies
What you do:
- Heat 2 T olive oil in large pot on medium high-high heat
- Sprinkle all sides of roast with salt and pepper
- Sear roast on all sides until each side is browned {this makes it juicier}
- Place roast in crock pot along with the onion soup mix, water, and broth.
- Cook on high until it begins to boil (took me around an hour)
- Turn to low for 8 hours.(you could skip step 5. I found it helps make the roast more tender though.)
- When done take roast out of juices and shred.
- Save juices to use as au jus.
- Serve on hoagies with cheese.
Serves 6-8.
It is definitively a meal to impress!
